Our oil is born in Grotte di Castro, a village suspended between Lazio, Tuscany, and Umbria, in a still-unspoiled corner of Tuscia, far from mass tourism but rich in treasures. Here, among gentle hills and open vistas, you can breathe the legacy of a very ancient civilization: the Etruscans.
The town’s name itself recalls the ancient “grotte” (caves) carved into the tuff stone, still visible today in the rock-cut necropolises that dot the landscape—living memories of a people who understood the value of earth, water, and oil.
Soil Forged by Fire
The true strength of our volcanic EVO oil lies in the land where our olive trees grow: a soil formed by ancient eruptions, rich in minerals and low in limestone, offering a unique and balanced nutrition to the trees. This special terrain—an inheritance of nearby Lake Bolsena, the largest volcanic lake in Europe—gives the oil a natural aromatic complexity, with vegetal hints, herbaceous notes, and remarkable depth and balance.
A Microclimate That Makes the Difference
The lake’s presence moderates temperatures, protects the olive trees from frost, and supports a slow, even ripening of the fruit. The result? Healthier olives, a gentler harvest, and a more fragrant, stable oil. In every bottle, volcanic Tuscia becomes a sensory experience.

We cultivate over 3,000 olive trees today, many of them centuries old, grown entirely with organic and natural methods. Every step—from pruning to harvesting, to cold pressing—is designed to preserve the land’s character. Our production avoids industrial shortcuts: it stems from the desire to protect biodiversity and offer not just a high-quality oil, but a true story rooted in a very specific place.
