The color of organic EVO oil: what does it really tell us about quality?

When we pour organic extra virgin olive oil onto a dish, the first characteristic that catches the eye is often its color. Many consumers associate color with quality, believing that a greener oil is automatically better than a more golden one. But is that really true?

A high-quality oil is recognized for its harmony, aromatic intensity, cleanliness, balance between bitterness and pungency, and its ability to express the territory from which it comes.
